First introduced in the US in 1967, Headstart is an example of Sakata’s 100+ years of venerable vegetable breeding. Headstart is quick to mature at 60-70 days from transplant. The bright green, round/slightly flattened heads are compact and heavy. The small to medium sized Copenhagen-Market type heads are best used fresh for slaw, sauerkraut, or slow cooking.
